OK, so they were for rigidity and also happen to direct water towards the plugs.
Normally, I'd agree with you about using flat sheet metal, but in this case, I don't think it's a big deal. Here's why:

If they have the proper support underneath and/or are thick enough, they can be flat. The fact of the matter is, the front floors in a late model Corvair coupe don't bear anywhere near a person's full weight. Why, you ask?
Because the front floors start where the top of the windshield is--the distance from floor to ceiling at this point is 40 inches, and it gets a lot lower from there.

For my repair, I'm going to leave as much of the old floor in place (just cut out the rotted parts in the middle), and attach new metal over the top. The only part that might require reinforcement will be in the very middle. A couple pieces of flat stock should take care of that. I'll test fit the new metal and see if it needs more support.

BTW, if the repair does not last, I can always replace with complete floor panels later, no harm done. I'll report the results either way.
